Smoked Salmon Open Faced

There's nothing more satisfying that a really delicious lunch that comes together in about 5 minutes flat! OK 10 minutes if you count the time it takes to toast your bread! I've included this "non-recipe" recipe here just because it's one of my absolute favorites for lunch in a pinch! I usually keep a package of smoked salmon in the fridge and make variations off this recipe depending on what I have on hand. If you don't have Aleppo pepper flakes on hand, then try this with Everything Bagel seasoning. In fact, this tastes great with both!

Ingredients

  • 4 slices of your favorite crusty bread
  • 2 Tbsp cream cheese, softened
  • 8oz thinly sliced smoked salmon
  • 1 avocado, sliced
  • 2 Tbsp capers
  • dill, finely chopped
  • 1 tsp Aleppo pepper for seasoning
  • 1 Tbsp extra virgin olive oil for drizzling

Instructions

  1. Toast your sliced bread either in a toaster oven or on a grill pan.
  2. When cool enough to handle, spread the cream cheese on each of the 4 slices of bread.
  3. Divide the 8oz of smoked salmon evenly between the slices of bread and carefully layer the salmon.
  4. Add sliced avocado on each piece of bread.
  5. Add some capers and chopped dill to the salmon.
  6. Sprinkle each toast with Aleppo pepper and drizzle with olive oil. Serve immediately.
